A delicious addition to that holiday party you’ve been planning! This appetizer is easy to prepare ahead of time and looks amazing due to the great contrasting colors of the mango and lettuce leaves. Enjoy!
APPETIZER RECIPE: CHICKEN MANGO CHUTNEY IN LETTUCE CUPS
Yield- 24 pieces
1 8 oz Chicken Breast
2 One head Butter or Romaine Lettuce
3 1/2 cup mango chutney
4 1/4 cup mayo
5 1 teaspoon ground cumin
6 1 teaspoon smoked paprika
7 1 teaspoon curry powder
8 1/2 teaspoon cayenne
- Marinate overnight -chicken in cumin, paprika, and curry.
- Sear chicken in frying pan until done.
- Cube chicken and mix in chutney, mayo, and cayenne to taste.
- Use a 2” cookie cutter and cut out 24 lettuce rounds.
- Fill rounds and enjoy!
